Slimming recipe no. 1: eggplant caviar

Eggplant caviar is a delicious, low-calorie Mediterranean dish. (As long as you don't use too much oil when preparing it, of course!) It's a great source of nutrients, fiber, and minerals, as well as a great way to fight cholesterol.

Ingredients (for 1 small bowl):
  • 1 eggplant
  • 1.5 tablespoons of olive oil
  • 1 clove of garlic
  • 1/2 teaspoon ground cumin
  • Salt, pepper

Preparation :

Start by preheating your oven to 210°.

Next, wash the eggplant and cut it in half lengthwise. Peel the garlic clove and crush it. Make slits in the flesh of the eggplant and place it in an ovenproof dish. Add the garlic and olive oil to the top of the eggplant and bake for 30 to 35 minutes. Once out of the oven, scoop out the cooked flesh of the eggplant with a spoon. Then blend everything (adding the cumin) to obtain a smooth mixture. Let everything cool. Season with salt and pepper to taste. Let's eat!
